Easy Crock Pot Fajitas

Dr. Hooper is in the house! And it smells great in here. Tonight, we're doing slow cooker fajitas. I hate cooking bell peppers and onions on the stove. It feels like it takes 2 hours to get them to soften up. This is something you can prepare the night before, throw in the crockpot in the morning, and come home from work to an almost ready-to-eat meal.
 
Prescription #1: Crock Pot Fajitas.
 
What you will need:
3 bell peppers (any colors)
1 onion
1 package of fajita seasoning
2-3 chicken breasts
Tortillas
Toppings (sour cream, shredded cheese, etc.)
 
Step 1: Cut your bell peppers and onions into strips. You can do this the night before and store it in a Tupperware, so all you have to do the next morning is throw it in the slow cooker.
 
 
Step 2: Add the vegetables on the bottom, the chicken on top.
 


Step 3: Add the seasoning mix over the top. Add 1-2 cups of water so the vegetables don't burn. Turn your crock pot on LOW for 6-8 hours or on HIGH for 4 hours, you may need to stir once or twice.

 
Step 4: Yum! Cut your chicken into strips and add back to the crock pot.
 

Step 5: Using a slotted spoon, scoop out some peppers, onions, and chicken onto a fajita-sized tortilla and add your toppings.
