Cornflake Chicken and Mashed Potatoes

Dr. Hooper here! I spent 3 years in Memphis, but in that short time I acquired a taste for chicken, as well as starchy, sugary foods high in fat and cholesterol. Comforts me deep down. Let's get started on a personal favorite of mine. Interesting.. While writing this I got a call from some missionaries from West Memphis who are going to come visit us tomorrow. Awesome!

Prescription #1: Baked Cornflake Chicken

What you'll need:
2-3 chicken breasts
1-2 cups cornflakes
1 melted stick of butter
3 eggs
Salt
Honey
Potatoes
Cheddar Cheese
Milk
Garlic Salt
Vegetable Side Dish

Step 1: First, preheat your oven to 425 degrees. Spray a 9x13 baking dish with non-stick spray. Melt the butter in a microwave safe dish. Crush the cornflakes in a Ziploc bag. Whip 2-3 eggs in a bowl set all of these ingredients to the side.

Step 2: Cut the chicken breasts into 1 1/2 inch strips, and assemble them in the baking dish. Drizzle the egg wash over the chicken strips.

Step 3: After you get the eggs on it, sprinkle on the crushed cornflakes, drizzle on half of the melted butter, and some salt. 


Step 4: Bake it in a 425 degree oven for about 20-30-40 minutes, or until the cornflakes get golden brown or start to burn in sparse areas. I don't like to gamble with salmonella. Then it will look like this:


Step 5: Drizzle honey over the top and now let's get started on some cheddar cheese and garlic mashed potatoes. 

Step 6: Peel several russet potatoes and cut them into 1 inch pieces. Boil them until they fall apart with a fork, drain, and add the remaining melted butter used from the chicken. Mash them up until there are few lumps.

Step 7: Mix in some milk, cheddar cheese, and garlic salt. I never measure just use your best judgement.


Throw in a vegetable and you have a delicious, soul-satisfying comfort food dinner inspired from a little shack called Vinegar Jim's in Arlington, TN (I really don't know if they serve this there but it sounded legit).
